July is my favourite month for food. I love that nature responds to the season with it's produce. I don't even want to look at my oven in this heat, so instead i'm eating lots of raw food, fruit and salads, smoothies, ice coffee and home made ice lollies. We have been devouring berries, tomatoes, nectarines, peaches, peppers, fresh lettuce and more, and it's all been arriving fresh with Abel and Cole. I'm thrilled to be collaborating with them seen as I talk about seasonal living so much! It's also helping us with our plan to go plastic free this month- more below.
All of this was in one box! It felt like Christmas with some of my all time favourite foods arriving in one go. What are your favourite summer recipe's? My favourite salad recently has been a super simple tomato salad with fresh basil, olive oil, salt, pepper and balsamic. And I love making really simple ice lollies with fresh or tinned fruit and almond milk (I blend together then pour into lolly molds).
I have actually been an Abel and Cole customer, on and off, for the last 7 years, and am really enjoying receiving boxes again. The food is as ethically produced as possible, entirely organic, and almost litter free too- everything can be recycled- you just leave all the packaging and boxes on your doorstep for collection day.
Have you ever thought about cutting out plastic or reducing litter? I cant stop thinking about it since I read about it on Rachels blog . We have been attempting a Plastic Free July and these boxes have meant we have been able to at least attempt it! Our plan with reducing plastic and litter is to basically stop shopping at the supermarket. There is such an excess of packaging there, and we're also trying to stop buying packaged snacks and make them instead (or go without, have a sandwich/eat fruit instead). I don't have time to make everything so there will always be some things I buy (bread and cow milk for example) but I am making hummus, lollies, chips, sometimes my own almond milk, and some healthy baked snacks too. We carry our stainless steel water flasks around with us everywhere at the moment too!
So- do you use a veg box scheme? or do you perhaps have an ace farmers market near by? What are your favourite simple summer recipe's? Have you thought about reducing plastic before?
Happy July folks! Hope you fellow Brits are able to stay cool in this heatwave!
